Ingredients

1½ lbs chicken thighs or breasts, cut into 1–1.5 inch chunks

½ cup grenadine syrup

3 tbsp olive oil

1 tbsp soy sauce

2 garlic cloves, minced

1 tsp ground cumin
-
½ tsp smoked paprika
-
Salt and pepper to taste

Optional: bell peppers, red onion, zucchini, pineapple, mango
Instructions

Slice chicken into evenly sized chunks.

Mix grenadine, olive oil, soy sauce, garlic, cumin, paprika, salt, and pepper in a bowl.

Toss chicken in the marinade and refrigerate for 30 minutes to overnight.

Soak wooden skewers in water if using.

Thread chicken and optional veggies/fruits onto skewers.

Grill over medium-high heat, turning every 2–3 minutes for 8–10 minutes.

During the last 2–3 minutes, brush on extra grenadine syrup for a sticky glaze.
Notes

Thighs are juicier, but breasts cook faster—both work well.

Don’t baste too early or the sugars will burn.

Broil in the oven if grilling isn’t an option.

Add grilled pineapple or mango chunks for a tropical twist.
